It was too late in the season to replant anyway; I would have gotten only beginning stalks and no corn. Once chopped and dried, though, the tender stalks make tasty and additive-free winter treats for the horses. The photo below shows the former "real" corn patch, chopped and drying in the sun, to be stored for colder times when a special something can make a mare whinney her delight into the frosty air.
And lucky for me, the donkeys left a couple of small cornstalks on the edge of the patch, and the newly forming ears of corn were just dangling, their long white silks waving me over to inspect. Well, the tiny ears reminded me of "baby corn" used in stir fry dishes, so I unwrapped them from their soft husks, pulled a few carrots, some scallions, added a handful of peas, some arugula, and headed back to the kitchen.
The result was a tasty dish without canned baby corn sprayed with who-knows-what...a reminder to "Be glad for whatcha got cuz it might be good!"
